Mac OS X only: CUPS-PDF lets you add a virtual printer to your Mac that spits out - you guessed it - PDFs.

Although Macs come with the wonderful “Save as PDF” option baked in, there are plenty of ways that a virtual printer like this can come in handy. Aside from the fact that I’ve set CUPS-PDF as my default printer (so I can just hit Cmd-P and then Enter whenever I want to save a PDF), the most inventive use pointed out by TUAW is setting up CUPS-PDF as a desktop printer and using it as a drag-and-drop PDF converter. Save as PDF still has it’s place, but for a quicker, mouseless PDF print, this is a great alternative - especially if you manage a large PDF library. CUPS-PDF is freeware, Mac OS X only. — Adam Pash
